Ingredientes:
Massa do bolo
- 100 g de marmelada
- 100 g de nozes picadas
- 200 g de farinha
- 250 g de açúcar
- 6 ovos (claras e gemas separadas)
- sumo de 1 laranja
O doce de ovos
- 150 g de açúcar
- 150 ml de água
- 6 gemas
Para a decoração (opcional)
- miolo de noz q.b.
Confeção:
Bata as claras em castelo e reserve.
Num recipiente à parte, bata bem as gemas, o açúcar e a marmelada até obter um creme fofo.
Junte o sumo da laranja e envolva bem.
Acrescente a farinha, alternada com as claras em castelo, ligando-as bem, mas delicadamente na massa.
Por fim, acrescente as nozes picadas e envolva bem.
Deite o preparado numa forma untada e polvilhada com farinha e leve a cozer, em forno pré-aquecido a 180º C, cerca de 30 minutos (até atingir o ponto de bolo)
Para o doce de ovos, leve ao lume a água com o açúcar, deixando apurar até fazer calda.
Deixe arrefecer um pouco e, entretanto, bata as gemas.
Aos poucos, vá envolvendo a calda nas gemas, mexendo bem.
Leve o doce de ovos ao lume, mexendo sempre até engrossar.
Depois de cozido, desenforme o bolo, deixe-o arrefecer e regue com o doce de ovos. Se desejar, decore a gosto com nozes.
